This is a big size cake of 30x40, ordered by an acquaintance for their boss at work. 

LAPIS SURABAYA



Lapis Surabaya is a traditional cake from Indonesia. It has three layers and always three layers. You don't want to mess up with the layers or it is not called Lapis Surabaya anymore. The layers are one chocolate sponge  between one vanilla sponge cake as the bottom layer and another vanilla sponge cake as the top layer. People can vary its quality ingredients based on choice. But it's basically butter cake with very small amount of flour. Lapis Surabaya is very soft and very delicious. All three layers only use yolks, which is ten yolks for each layer. I got order one time for this cake and considering the cholesterol amount in the yolk, and based on request I used half and half of the yolk and the white eggs.  It still tasted good but not as good when using all yolks.
